Grandma Mabels Famous Recipes!

Grandma Mabel in her kitchen - this is where the magic happens!

Grandma Mabel has been cooking on this farm for over 50 years. These recipes have been passed down through three generations of Henderson women. She finally let me put them on the Internet!!

Grandma Mabels Prize-Winning Apple Pie
This pie has won the Blue Ribbon at the Black Hawk County Fair SEVEN times!! Grandma says the secret is Granny Smith apples and a pinch of nutmeg.

Ingredients:
  • 6-7 Granny Smith apples, peeled and sliced
  • 3/4 cup sugar
  • 2 tablespoons flour
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg (the SECRET ingredient!)
  • 1 tablespoon butter
  • Pastry for double-crust pie
Directions:
Mix sugar, flour, cinnamon and nutmeg. Toss with apple slices. Pour into pastry-lined pie plate. Dot with butter. Cover with top crust, seal and flute edges. Cut slits in top. Bake at 425 degrees for 40-45 minutes until golden brown and bubbly. Let cool on a wire rack. Serve with vanilla ice cream from the Dairy Barn!!

Strawberry Freezer Preserves
We sell these at the roadside stand for $4 a jar and they sell out EVERY weekend!! People drive from Waterloo just to get them.

Ingredients:
  • 4 cups crushed fresh strawberries (from our garden!)
  • 4 cups sugar
  • 1 package powdered pectin
  • 3/4 cup water
Directions:
Combine strawberries and sugar, let stand 10 minutes stirring occasionally. Combine pectin and water in a saucepan, bring to a boil, boil 1 minute. Pour over fruit mixture and stir 3 minutes. Ladle into clean mason jars leaving 1/2 inch headspace. Let stand at room temperature 24 hours. Store in freezer up to 1 year or fridge up to 3 weeks. Grandma says NEVER use frozen berries - fresh only!!

Sweet Corn Casserole
This is what Mom brings to every church potluck and it is ALWAYS the first dish to be empty!! Uses our own sweet corn of course.

Ingredients:
  • 2 cans cream-style corn (or 4 cups fresh cut off the cob)
  • 2 eggs, beaten
  • 1 cup sour cream
  • 1/2 cup melted butter
  • 1 box Jiffy corn muffin mix
  • 1 cup shredded cheddar cheese
Directions:
Mix all ingredients except cheese. Pour into a greased 9x13 baking dish. Bake at 350 degrees for 45 minutes. Sprinkle cheese on top and bake 15 more minutes until set and golden. Let stand 5 minutes before serving. Tyler eats like three helpings every time LOL.
